Chicken tikka masala is a spiced curry sauce made with roasted marinated chicken chunks (chicken tikka). Typically, the curry is creamy and orange in colour. Cooks from the Indian subcontinent living in the United Kingdom popularised the dish, which is now served in restaurants all over the world.

Is there a distinction between tikka and masala tikka? Chicken chunks are used in both the tikka and the tikka masala. So, what's the difference between the two? The only significant distinction is that chicken tikka masala contains extra masala (or spices).

However, there are numerous disagreements about the origins of chicken tikka masala. Tikka masala is said to have developed in the United Kingdom in the 1970s. Others claim that it was originated in the Indian state of Punjab.  Chicken tikka, on the other hand, is not a heated issue. For more than 50 years, it has been a staple of Indian cuisine. Chicken tikka originated in India and spread throughout the world.

Boneless chicken pieces are roasted using skewers in a clay oven called a tandoor. It is marinated in yoghurt and spices before being baked or cooked in a cast iron/ kadai.

Chicken tikka masala is made in a similar way, but with the addition of masala or mixed spices also it is a little spicier than regular tikka. A crimson sauce is served with tikka and tikka masala. The sauce is creamy, spicy, and has tomatoes in it. Other ingredients in the sauce could include coconut cream and paprika powder.

Recipe For Chicken Tikka Masala:

  1. Boneless Skinless chicken thighs-8 ( 2 -1/2 pounds)
  2. Onion (sliced)- 1
  3. Whole Peeled Tomatoes- 1
  4. Heavy Cream- 1/2 Cup

Kosher salt- 4 tsp, Kashmiri red chili powder- 1 tsp,  Garam masala- 1 tsp, Freshly ground black pepper- 1 tsp , Ground turmeric- 1/2 tsp, Cloves garlic- 2, Finely grated  serrano chiles - 2.

Spice Mix 2:

Step 1: To make the chicken marinade, in a large mixing bowl, combine the yoghurt and the spice mix 1 (ginger, salt, chilli powder, garam masala, pepper, turmeric, and garlic). In a large mixing bowl, toss the chicken with the spicy yoghurt marinade until it is uniformly coated. Refrigerate for at least 3 hours and up to 24 hours after wrapping in plastic wrap. (It's preferable if you wait until the next day.)

Step 2: To cook these chicken, add 1 tablespoon ghee, heat it in a large skillet over medium-high heat. Cook for about 6 to 7 minutes, or until the chicken thigh pieces are cooked through.

Step 3: Wipe down the pan where the chicken was cooked. Over medium heat, heat the remaining ghee. Cook, stirring frequently, for 5 minutes, or until the onions are softened. Grate the ginger, mince the garlic, add the coriander, paprika, garam masala, turmeric, black pepper, salt, and cayenne pepper, and mix well. Allow 30 seconds to a minute for the spices to become fragrant.

Step 4: Add the crushed tomatoes and spices to the pan and simmer for 4 minutes, stirring often. Stir in the cream until everything is well combined.

Step 5:  Reduce the heat to medium-low and continue to cook the sauce for another 15 minutes.

Pro Tip

  1. For a better colour, Kashmiri red chilli powder has a vivid red hue and is mildly spicy.
  2. In Indian cookery, ghee is clarified butter. If you don't want to add ghee, you can cook the cuisine with regular butter also.
  3. Dried fenugreek leaves are used because of their nutty, slightly minty flavour. If you can't find them, use dried mint leaves and a pinch of fenugreek powder instead.

Add cilantro to the top of the chicken and sauce. Serve it with rice and naan bread.
