Chicken tikka is a famous chicken dish in India, Bangladesh, and Pakistan that originated on the Indian subcontinent. The Persian word tikka means "bits" or "parts" in English. Punjabi cuisine also includes a chicken dish. However, the Kashmiri version is cooked over red-hot coals and does not usually contain boneless portions. While being continuously fanned, the pieces are coated with ghee at intervals to enhance their flavour. It's usually served with onion rings and lemon, along with green coriander and tamarind chutney.
Chicken tikka comes in a variety of flavours, including chicken tikka with curry, chicken tikka baked in the oven, and chicken tikka barbecued in a tandoor.
All of these Chicken Tikka dishes have one thing in common: they're all delicious. Chicken tikka is usually served as a sizzler, a meal in which the chicken is fried with onions on a hot plate. In terms of cooking, this recipe is the simplest and takes the least amount of time. It's simply a boneless tandoori chicken that's marinated in Indian spices and curd before being cooked on skewers on a "angeethi" brazier or over charcoal (yoghurt).
The meal is also popular in Afghanistan, the Afghan version (like many other Persian, Turkish, and Arab cuisines) is less spicy than the Indian subcontinent versions and includes beef and lamb as well as chicken.

Ingredients:
  1. Chicken breasts500g - chopped into bite-size chunks
  2. Thick natural yogurt (full fat)- 1 Cup
  3.  Garlic cloves(peeled and minced)- 2
  4. Minced ginger- 1 tbsp
  5. Juice of half a lemon
  6. Ground coriander-1 tsp
  7. Turmeric- 1/2 tsp
  8. Cumin- 1/2 tsp
  9. Paprika- 1/2 tsp
  10. Mild chilli powder- 1/2 tsp
  11. Pinch of cinnamon
  12. Salt to taste
  13. Black pepper- 1/2 tsp
  14. Vegetable oil (for brushing onto the chicken before grilling)- 2 tsp
  15. Freshly chopped coriander

Recipe For Making Chicken Tikka:

Step 1: Combine the chicken breast pieces, yoghurt, garlic, ginger, lemon juice, coriander, turmeric, cumin, paprika, chilli powder, cinnamon, salt, and pepper in a bowl or freezer bag.

Step 2: Combine all ingredients in a mixing bowl, then cover and refrigerate for 2-3 hours to marinate.

Step 3: If you're going to use wooden skewers, soak them in water while the chicken marinates. This will help keep them from burning when grilling.

Step 4: Take the marinated chicken out of the refrigerator and thread it onto skewers.

Step 5: Brush the chicken with the oil, then lay it on a griddle plate and cook for 8-10 minutes, rotating once or twice, until done. You can also cook (broil) under a grill or barbeque for the same amount of time.

Step 6: By slicing the chicken into a larger chunk and verifying it is no longer pink in the middle, you can ensure it is fully cooked.

Step 7: Garnish with a sprinkle of fresh coriander.
