There are colourful and delighting vegetables like capsicum, carrots, cabbage and peas in winters as compared to summer harvest that includes the dreadful ghiya and lauki. In winters, there are various types of parathas with fillings of potato, cauliflower, peas etc. and a huge variety of dishes made from these vegetables ranging from jams to pickles and halwa. Now when we talk about winters in India, we cannot ignore the significance of gajar ka halwa.

Gajar ka Halwa is one of the many essential dishes of winters that you will definitely find in an Indian household. This sweet dish made of grated carrots cooked in sugar syrup and milk condiments actually feels like ultimate heaven on your taste buds. The milk condiments neutralise the sweetness of sugar and carrots, blending perfectly and the halwa melts in your mouth like butter. Sweet, savoury, perfect.

However, while gajar halwa is the perfect food for your sweet cravings, it is not very healthy majorly because of the excessive sugar content. While carrots and milk are healthy ingredients, the sugar that you add in halwa ruins their health properties. Does that mean you should not add sugar in it? That is not possible as a sweet dish is supposed to be 'sweet'. What you can do is replace your regular unhealthy sugar with a healthier alternate that is equally sweet. How? Sugar Free Gajar Halwa Recipe

Ingredients :

  • 8-10 carrots
  • 3 tbsp ghee
  • 2 cups milk
  • 10-15 golden raisins (sultanas)
  • 1/4 tsp cardamom powder
  • 1/4 cup khoya
  • 1/3 cup sugar substitute/sweetner (optional)
  • Dry fruits of your choice

Cooking Instruction :

  1. Grate the carrots and keep them aside. Also grate the khoya and keep it separately.
  2. Add ghee to a pan or cauldron and heat it. Then add the grated carrots to the pan and saute for about 5 minutes.
  3. Once the water of the carrots dries up, add skimmed milk to it and mix. Cook the carrots in milk until the milk thickens.
  4. Add sultanas (golden raisins), sweetner and cardamom powder to the carrots and mix well. Cook for another 10-15 minutes so that the sugar in raisins and sweetner are absorbed perfectly.
  5. After this add khoya and mix well and cook it until the moisture dries up.
  6. Garnish with your favourite dry fruits and serve hot.

This sugar free recipe is really great for diabetic and diet conscious people who feel like they cannot enjoy their favourite gajar halwa without sugar. In this recipe we have used golden raisins, if you don't have them you can use normal raisins. In fact, you can use any healthy artificial sweetner or even jaggery to make delicious gajar ka halwa. Instead of adding raisins, add jaggery in the milk and cook. Jaggery is healthy sugar and is beneficial during winters as it enhances immunity and fights cold and flu.
