National Crepe Day, or La Chandeleur is a Catholic church-observed feast that originated in France. It occurs exactly 40 days after Christmas and, coincidentally, around the midpoint of the winter season, making the day a hybrid of the two.

Crepe Day can be traced back to Candlemas, which is observed every year on February 2nd. This is a Catholic celebration of Mary and Joseph presenting Jesus at the temple shortly after his birth. Candlemas is another name for the day, and it appears to have something to do with the candles used in religious rituals.

In French and Belgian cultures, crepes' circular shape has taken on importance, since the roundness signifies either the sun or a coin–the sun for warmth after a hard winter, or a coin for money and good fortune. Unlike pancakes, which give the diner a heavy full sensation that might contribute to fatigue, the crepe has the exact opposite effect! A crepe is a delectable filling encased in a thin coating of flavour.

On National Crepe Day, we have two simple crepe recipes for you to try:

Simple Crepe Recipe: 
Prep: 45 mins, Total: 1 hr 15 mins,  Servings for 4 People

Ingredients: 

  1. 1 tablespoon granulated sugar
  2. 1/4 teaspoon kosher salt
  3. 1 1/2 cups whole milk, room temperature
  4. 4 large eggs, room temperature
  5. 3 tablespoons unsalted butter

Recipe: 

Step 1: Blend flour, sugar, salt, milk, eggs, and butter in a blender for 30 seconds or until smooth. Refrigerate for 30 minutes or up to 1 day; before using, mix for a few seconds.

Step 2: Over medium heat, heat an 8-inch nonstick skillet. Apply a thin layer of butter on the surface. Pour 1/4 cup batter into skillet's centre, tilting and turning pan until batter is uniformly coated.

Step 3: Cook for 1 to 1 1/2 minutes, or until the crepe is brown on the bottom and the edges begin to lift off the pan. With an offset spatula, lift one edge of the crepe, then carefully turn it with your fingers.

Step 4:  Cook for 45 seconds on the second side, or until just set and golden in spots on the bottom. Place crepe on a dish lined with paper towels.

Step 5: Repeat with the remaining batter, brushing the pan with additional butter as needed and stacking crepes on top of one another.

Step 6: Allow to cool to room temperature before using, then wrap in plastic wrap and store in the refrigerator for up to 5 days or freeze for up to 1 month. Repeat with the remaining ingredients.

Dessert Crepe Recipe: 

Prep: 1 hour, Total:  20 mins,  Servings for 4 People

Ingredients: 

  1.  3/4 cup all-purpose flour
  2. 1 teaspoons salt
  3. 1 cup milk (preferably whole)
  4. 2 eggs
  5. 2 tablespoons sugar
  6. 1 tablespoon melted butter, plus more for cooking crepes
  7. 1/2 teaspoon vanilla extract
