Carrot Cake Day : Carrot Cake Recipes To Celebrate The Dish

This Western European dish made of carrots, flour, sugar, eggs and nuts evolved through ages and now comes with several variations. The soft and spongy bread filled with sweet flavour of carrots and a tangy layer of cream cheese icing that makes you melt into a puddle as it touches your taste buds. That is what a perfect carrot cake feels like. It awakens all your senses and drowns you into the rich, creamy and moist flavours that feel oddly comforting. Now that we have talked so highly of it, let's introduce you to a simple recipe that you can try this Carrot Cake Day that will a practical demonstration of the sensational roller coaster described above.

Carrot Cake Day Special : Easy Carrot Cake Recipe

  1. In a big bowl, whisk 250 gm flour, 1/2 tsp salt, 2 tsp baking soda, and 1 and a 1/2 tsp cinnamon.
  2. In another bowl, whisk granulated sugar and brown sugar (200 gm each), 1 tsp vanilla, 1 and 1/4 cup oil and 4 eggs (one at a time).
  3. Add the sugars and oil to the flour in parts while mixing with a spatula constantly.
  4. Add 300 gm peeled carrots, 100 gm pecans and 65 gm raisins and mix well.
  5. Divide the smooth batter into two and transfer into two 9-inch baking dishes lined with parchment paper and greased.
  6. Bake in an oven pre-heated to 176 C for 35-40 minutes. The cake is cooked when a toothpick inserted in it comes out clean.
  7. Let the cakes cool and then invert the baking dish and tap the bottom to take out the cake. Peel off the parchment paper.
  8. Now in a bowl, beat 225 gm cream cheese with a mixer until it turns creamy.
  9. Slowly add 1 and 1/4 cups powdered sugar to the bowl in parts and beat with cheese. Add 1/3 cup whipping cream and beat for another one minute.
  10. Refrigerate the cream cheese frosting until it is ready to be applied on the cake.
  11. Once the frosting has cooled, add a layer of it on top of one cake and then keep the other cake on top of it.
  12. Add frosting on the top of the cake evenly. Don't frost the sides. Top with nuts and serve.
