Known for her innovative approach to pastry, Polyviou's creations defy convention with their playful presentation and inventive blend of sweet elements. At the Jamnagar event, she treated guests to her signature dish, Anna's Mess, a whimsical and deconstructed twist on the traditional Eton Mess.

Anna Polyviou is a renowned pastry chef known for her innovative and captivating desserts at the Shangri-La Hotel, Sydney. With a career marked by accolades and creativity, she has recently released a cookbook titled Sweet Street, offering readers the opportunity to create impressive sweet treats with minimal effort.

Beginning her culinary journey at the Sofitel Hotel in Melbourne, Anna quickly rose to prominence, winning the Best Apprentice in Victoria competition and earning a scholarship to further her career globally. She honed her skills in London at Claridge’s Hotel, working under esteemed pastry chefs Julie Sharp and Nick Paterson. During her time in London, Anna also clinched various awards and competitions, including the Nadell Trophy and the Culinary Academy Award of Excellence for pastry.

Returning to Australia as the Creative Director of Pastry at Shangri-La Hotel, Anna revolutionised the hotel patisserie scene with her fun and interactive dessert activations. Her dessert degustation and high teas became must-try experiences, firmly establishing Shangri-La on the culinary map in Australia.

Anna's presence extends beyond the kitchen, as she is a familiar face on Australian television. She has appeared on popular shows such as Family Food Fight and MasterChef Australia, showcasing her culinary prowess and leaving judges and contestants in awe with her challenging and extraordinary desserts.

As a prolific author, Anna launched her first cookbook, Sweet Street, in 2018, which quickly became a bestseller. Her second book, Kids’ Corner, followed in 2019, further solidifying her reputation as a leading figure in the culinary world.
